The Open Hand Cooking Matters Food & Nutrition Class introduced me to valuable information about how food choices impact our overall health, especially, as it relates to diabetes control and management. I read food labels carefully and am more deliberate in selecting food options at the grocery store inorder to continue the use of the tools acquired in class. The cooking demonstrations and hands-on food preparation and cooking techniques and experiences obtained in class have allowed me to prepare new food options, as well as save time and money in the kitchen. I now incorporate herbs and seasonings in my dishes which helps limit the use of sodium and sugar in my meals.The weekly produce deliveries were an added bonus to help prepare healthy and nutritious meals at home. How the items were used at home was included in the class discussions

The dietitians were extremely knowledgeable and presented information in formats that were easy to grasp and encouraged for extended use at home. Everyone involved in the program was cordial, welcoming, and inclusive to all members of the class. We developed bonds with one another and looked forward to attending the class. Comradery was helpful in our continual involvement in the class.

With individuals contracting type II diabetes at earlier ages, being able to promote the class information allows better food choices and food preparation for class members to use for themselves and their families which can only aid in

the possible prevention, control and management of a long overlooked disease that affects so many individuals.

My participation in this class was immeasurable and is practiced on a daily basis. I enjoyed every facet of the class and hope that the class will continue to be implemented and serve populations that will benefit greatly from the wealth of information that will be introduced to them.
